Then join us in the Yeti foods project at The BioInnovation Institute (BII) in Copenhagen, where we are currently looking for an experienced food scientist to help us explore what foods we can develop with our innovative mycoprotein.
The current position is for 6 months, with the possibility of extension as further funding is acquired.
Incubated by the Novo Nordisk Foundation, BII’s mission is to create new life science solutions to address unmet societal or health needs. At BII, we have established a program, Bio Studio, which aims to build life science start-ups based on world-class research. Bio Studio projects are three-year grant funded projects sourced from leading researchers employed at research institutions worldwide. The projects we admit combine scientific novelty, commercial viability, and the potential for significant societal and/or health impact. The goal of the projects is to create a viable start-up company based on the project within the three years.
BII aims to recruit a strong project team for each Bio Studio project, and it is expected that this team will form the core of the future start-up deriving from the project. Apart from establishing a solid Project Team to be headed up by a Entrepreneur-in-residence (EiR), BII provides a comprehensive network of industry, investors, and subject matter experts to support the projects.

Yeti foods is on a mission to reshape the food that we eat, to ultimately have a triple impact on planetary health, human health, and animal welfare. Yeti Foods is developing new mycoprotein through an intertwined exploration of genetic engineering, fermentation science, and food science.
Located in Nørrebro, Copenhagen, the project is part of the Bioinnovation institute’s (BII) Bio Studio program. Currently half-way through the program, Yeti foods is preparing for fundraising and spinning out the company. The project originated from research in the labs of professor Irina Borodina at the Center for Biosustainability at Technical University of Denmark (DTU Biosustain).
We are now looking for a passionate food scientist with experience in product formulation and food processing to join our team.
Together with our team, you will be at the leading edge of exploring how modern biotechnology can help us shape a better food system. In your daily work you will be responsible for the development of our product formulation, collaborating closely with the strain development and fermentation teams, providing feedback and insights. You will also be responsible for the processing of regularly produced mycoprotein biomass (downstream, formulation, and cooking), and arranging internal tastings of produced products.
In essence, you will be responsible for turning our mycoprotein biomass into delicious foods.
Your ownership of our mutual journey will be to:
- Develop and improve food processing and product formulation
- Explore different applications using engineered mycoprotein
Your daily work and well-being will be shared directly with the Entrepreneur in residence and scientific lead, but as a small team with close ties, you should be prepared for many cross-functional tasks and inspiring discussions that can help shape the direction of Yeti foods. Furthermore, you will be part of the greater Bio Studio community, consisting of multiple projects working to solve their own grand challenges.

Besides this, you ideally have:
- MSc in food science or similar with at least 2years of work experience in food development in a company setting
- Previous experience with formulation of food products. Mycoprotein or plant-based proteins are a plus
- Previous experience with food processing in a commercial setting
- A culinary mindset. Previous experience as a chef in restaurants is a plus
- The ability to work independently, to plan and carry out complicated research tasks, and to report results in oral and written forms
- Excellent communication skills, fluent written and oral scientific English
- A well-organized, efficient, result-oriented work attitude with excellent record-keeping abilities
