About Us
REDUCED is at the forefront of B2B upcycling, pioneering fermentation technologies that transform food industry side streams into high-quality savoury ingredients. Our mission is to elevate the power of gastronomic sciences to food industry quality standards while creating value in the circular food industry.
As a growing food-tech startup, we’re seeking a
Process Development Engineer to help us develop our solid product portfolio, optimise flavour retention and scale innovative powder-based ingredients with world-class quality and stability.
Position Overview
In this role, you’ll lead the analysis and development of technologies to produce our clean-label, solid product portfolio. From understanding which technologies best fit our products to optimising feed and substrate formulations and executing pilot/industrial-scale trials, you’ll be responsible for flavour optimisation, scalability, yield improvement, and long-term product stability.
This is a hands-on, cross-functional role involving technology assessment, lab-scale development, pilot-scale trials, and coordination with co-manufacturers to scale products consistently.
Key Responsibilities
Technology Development
- Evaluate and select the most suitable technologies to build a robust solid product portfolio, with a strong focus on flavour optimisation and process scalability.
- Drive process improvements in raw material sourcing, hygroscopicity control, bulk density, flowability, and packaging systems to ensure extended shelf stability.
- Conduct root cause analysis and troubleshooting of production challenges (caking, inconsistent particle size, flavour degradation).
Process Control and Quality
- Develop and implement solid product process controls to ensure consistent flavour retention, particle morphology, and powder stability.
- Document and monitor KPIs for yield improvement, flavour retention (≥ 90%), and product shelf life (≥ 5 years).
- Create and maintain SOPs covering feed preparation, drying/concentrating parameters, and downstream product handling.
Process Optimisation and Scale-Up
- Optimise feed/product preparation (natural carriers, emulsions, encapsulation matrices) to maximise flavour stability while meeting clean-label standards.
- Study the impact of process parameters (inlet/outlet temperatures, atomisation methods, feed solids, drying kinetics) on flavour, yield, and final product quality.
- Scale processes from benchtop to pilot and industrial production, ensuring robust transfer protocols and reproducibility (≥ 95% success rate).
Documentation and Data Management
- Define detailed process descriptions, SOPs, and technical data sheets to support technology transfer and regulatory needs.
- Maintain accurate experimental records linking process conditions to flavour delivery and product stability.
Success Criteria
- Improve yield by ≥ 40% during scale-up.
- Deliver ≥ 90% flavour compound retention across drying and storage.
- Ensure ≥ 5-year shelf life stability under standard conditions.
- Launch clean-label solid products with validated natural carrier systems (no synthetic additives).
- Drive cross-functional alignment to meet R&D, operations, and quality goals across multiple production sites.
Qualifications
- Master's degree in chemical, Mechanical, or Food Engineering
- 5+ years of hands-on experience in process development for solid product and process engineering.
- Proven track record of flavour optimisation, encapsulation, and clean-label formulation.
- Strong technical knowledge of natural carrier systems (carbohydrates, proteins, lipids) and their role in encapsulation efficiency.
- Proficiency in process modelling, drying kinetics, and advanced analytical tools (GC-MS, particle size analysis, water activity, sensory evaluation).
- Demonstrated success in scaling food products from lab to commercial to production.
- Strong project management, troubleshooting, and cross-functional collaboration skills.
Benefits
- Make a direct impact by shaping REDUCED’s solid product portfolio and technology platform.
- Competitive salary with performance incentives.
- Flexible working environment in Copenhagen’s Frederiksberg/Nordhavn neighbourhoods.
- Opportunity to join a mission-driven startup on its way to deliver impact at scale through food-tech innovation.
Application Process
Send your CV and cover letter (in 1 pdf document) highlighting your experience with
process development/ optimisation and scale-up of clean-label products. Please include examples of previous work that improved
yield, flavour retention, or product shelf life.
